Apricot Kernel Butter Recipe
Apricot kernel are basically high quality, naturally dried, fresh, grown in California which have not been cooked or steamed, and, therefore, hold their full complement of natural nutrients. Because of their odd flavor, many customers using them consider them to be a spice.
As with most of spices, however, the flavor may not be pleasing when consumed in large quantities or alone. One would not look forward to eat a handful of pepper corns, for example, without undergoing an adverse reaction. Similarly, one should not anticipate enjoying eating apricot kernels straight out of the bag – though many customers using them say that they have no problem in tasting that way and even have started liking it.
For majority of them, however, this is not the case, and it is recommended that the kernels should be grounded in a blender, placed into a grated cheese shaker, and then sprinkled lightly over foods of main course. When used in this way, they take on flavor similar to almond that for most of the people is quite pleasing.
They are tasty particularly on hot vegetable dishes, baked potatoes, fruit and soup and also when combined with granola or cold cereal. They truly put in to the flavor of nearly everything.
Many customers even love to chew the kernels, chopped or whole, along with something sweet, like trail mix of carob chips, coating with melted carob, coconut flakes and unsulfured raisins. A tasty candy role can be prepared from this mix by adding a bit of honey and coating it with melted carob.
Some customers using apricot kernel say that they buy empty gelatin capsules at their drug store or health-food store and then fill up them with ground up kernels. This is the most convenient way for carrying the kernels as seasoning for use away from home.
